Head Chef de Cuisine (m/f/d) for modern Indian cuisine restaurant

We are currently recruiting a Head Chef de Cuisine (m/f/d) for an innovative Indian restaurant located in the city centre of Berlin. The restaurant will present a modern interpretation of classic Indian cuisine. The mission is to provide the guests with a unique culinary experience that blends tradition with innovation. To enhance the team, we are seeking a talented and creative Head Chef (m/f/d) who shares this vision and can passionately shape the culinary identity of the new restaurant. 

Responsibilities

  • Develop and implement an innovative and contemporary menu that incorporates traditional Indian flavors and modern and international cooking techniques. 
  • Ensure the quality and consistency of all dishes, including preparation of spice blends, marinations, and sauces. 
  • Lead and motivate the kitchen team, including hiring, training, and staff development. 
  • Ensure compliance with hygiene and safety standards in accordance with regulations (HACCP). 
  • Support efficient inventory management and cost control to ensure restaurant profitability. 
  • Collaborate closely with the management team to plan seasonal menus, special events, private hires, outdoor activities (if any), and marketing initiatives. 
  • Interact with guests from time to time to share with them about our culinary philosophy, cuisine, and culture. 
  • Work hand in hand with the management team for strategic planning, P&L planning, and collaborate with the team to achieve company goals. 

 Requirements

  • Proven experience as a Head Chef or as a Sous Chef in upscale dining, preferably with a focus on Indian cuisine, but also Asian cuisine and French way of cooking. 
  • Experience of working with modernist ingredients. 
  • Knowledge of developing and working with in-house ferments and preserves. 
  • A basic understanding of all the kitchen departments including pastry, bakery, saucier, and grill, etc. 
  • To have an eye for finesse and modern gastronomic food presentation. 
  • Knowledge of local produce, seasonality, and vendors, with actively building relationships with them. 
  • Understanding of sustainable kitchen and bar practices and to help develop and implement planet-friendly ops SOP. 
  • You are creative and passionate for blending traditional and contemporary cooking techniques. 
  • You are excellent in leadership skills and the ability to inspire and develop a motivated kitchen team. 
  • You bring a deep understanding of the diversity of Indian cuisine and the ability to learn and conduct deeper study on the cuisine and culture of India, create innovative flavor combinations using native Indian ingredients, and train the team on such newer findings. 
  • You have excellent organizational skills and the ability to work under pressure, delivering high-quality dishes in a busy environment. 
  • You are fluent in English. German; knowledge of German, Hindi, or other Indian languages is advantageous but not mandatory. 
  • Ability to manage and nurture a multi-ethnic team.
